A comforting and flavorful dish combining tender chicken, roasted sweet potatoes, and Brussels sprouts, perfect for any season.

  • 2 medium sweet potatoes, diced
  • 1 cup Brussels sprouts, halved
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced

  • Fresh herbs (like thyme or parsley) for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat until it shimmers.
  2. Add diced sweet potatoes and cook for about 10 minutes.
  3. Toss in chopped onion and minced garlic; cook until onion is translucent, about 5 minutes.
  4. Stir in halved Brussels sprouts and cook until tender, about 5-7 minutes.
  5. Add shredded chicken, mix everything, and heat through for 3-5 minutes.

Notes
