Healthy Avocado Mayonnaise

A creamy, nutritious alternative to traditional mayonnaise made with ripe avocados, heart-healthy oils, and fresh lemon juice. This dairy-free, egg-free spread is perfect for sandwiches, wraps, and dips while providing healthy fats and vitamins.

Ingredients

  • 2 medium ripe avocados (about 1 cup mashed)
  • 1/4 cup extra virgin olive oil (or avocado oil)
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tsp Dijon mustard
  • 1 garlic clove (minced)
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 24 tbsp water (as needed for consistency)
  • Optional: 1/4 tsp cumin or 1 tbsp fresh herbs (dill, cilantro, or chives)

Instructions

  1. Prepare avocados: Cut avocados in half, remove pits, and scoop flesh into a food processor or blender.
  2. Blend base: Add lemon juice, Dijon mustard, garlic, salt, and pepper. Process until smooth.
  3. Emulsify: With processor running, slowly drizzle in olive oil until fully incorporated and creamy.
  4. Adjust consistency: Add water 1 tablespoon at a time until desired mayonnaise-like texture is reached.
  5. Season: Taste and adjust seasoning, adding more lemon juice, salt, or optional spices as desired.
  6. Store: Transfer to an airtight container, press plastic wrap directly on surface, and refrigerate for up to 3 days.

Notes

  • Use immediately ripened avocados for best texture
  • For extra tang, add 1/2 tsp apple cider vinegar
  • Variation: Replace lemon with lime for a Mexican-inspired version
  • Browns slightly when exposed to air – keep covered tightly
  • Not suitable for freezing
  • Makes about 1 1/4 cups
