Healthy Banana Bread with Almond Flour

A guilt-free twist on classic banana bread, using almond flour for a moist, nutritious loaf that’s gluten-free and packed with flavor.

  • 3 ripe bananas, well-mashed
  • 2 cups almond flour, blanched
  • 1/4 cup honey or maple syrup
  • 3 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. Add the eggs, honey or maple syrup, and vanilla extract; mix well until combined.
  4. Incorporate the almond flour, baking soda, salt, and cinnamon gradually, mixing until just combined.
  5. Pour the batter into the prepared loaf pan, smoothing the top.
  6. Bake in the center of the oven for 45-50 minutes or until a toothpick comes out clean.
  7. Cool the banana bread in the pan for 10 minutes before transferring to a wire rack.
  8. Slice and enjoy warm or at room temperature.

Notes

For a vegan option, substitute eggs with flax eggs or unsweetened applesauce.
