  • 1 lb lean ground turkey (93% lean or higher)
  • 2 tbsp taco seasoning (store-bought or homemade)
  • 1/2 cup water
  • 1 tbsp olive oil (optional)
  • 8 small tortillas (whole wheat or corn)
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1 avocado (sliced or mashed, optional)
  • 1/2 cup shredded low-fat cheese or dairy-free alternative (optional)
  • 1/2 cup plain Greek yogurt (optional)
  • Fresh cilantro (optional)
  • Lime wedges (optional)

Instructions

  1. Prepare the Ingredients: Gather and prep your toppings. Warm the tortillas in a skillet or microwave for about 30 seconds.
  2. Cook the Ground Turkey: Heat a non-stick skillet over medium heat and add olive oil if needed. Cook the ground turkey for 5 to 7 minutes, or until no longer pink.
  3. Season the Turkey: Add taco seasoning and water, stir to combine. Simmer for 2 to 3 minutes until thickened.
  4. Assemble the Tacos: Spoon seasoned turkey onto each tortilla. Top with lettuce, tomatoes, onions, and avocado. Add cheese and Greek yogurt if desired.
  5. Garnish and Serve: Garnish tacos with fresh cilantro and lime juice. Serve immediately.

Notes

Store leftovers in the fridge for up to 3 days, and the turkey mix can be frozen for up to 3 months.
