Hearty White Bean and Kale Soup

A warm, comforting bowl of soup made with creamy white beans, vibrant kale, and robust garlic.

Ingredients

  • 1 can white beans, drained and rinsed
  • 2 cups kale, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon Italian herbs
  • Salt and pepper to taste
  • Optional: cooked chicken or sausage for added protein

Instructions

  1. In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion and sauté for about 5-7 minutes until translucent.
  2. Toss in the minced garlic and cook for another minute until fragrant.
  3. Add the chopped kale to the pot and cook for about 3-4 minutes until wilted.
  4. Stir in the drained white beans, vegetable broth, and Italian herbs. Ensure even distribution.
  5. Increase heat to bring to a gentle boil, then reduce and simmer for about 15-20 minutes.
  6. Season with salt and pepper to taste before serving.
  7. Enjoy warm, with optional protein toppings if desired.

Notes

Store leftovers in airtight containers in the refrigerator for up to 5 days. This soup also freezes beautifully.
