Ingredients

  • Beef Roast (3-4 lbs, ribeye, sirloin tip, or top round)
  • Fresh Rosemary (2 tablespoons, chopped)
  • Fresh Thyme (2 tablespoons, chopped)
  • Garlic (4 cloves, minced)
  • Olive Oil (3 tablespoons)
  • Dijon Mustard (2 tablespoons)
  • Salt (2 teaspoons)
  • Black Pepper (1 teaspoon)
  • Red Wine (1 cup, optional)

Instructions

  1. Take the beef roast out of the fridge an hour before cooking to reach room temperature.
  2. Preheat the oven to 450°F (232°C) and set a roasting rack in a roasting pan.
  3. In a bowl, combine rosemary, thyme, garlic, olive oil, mustard, salt, and pepper to create the herb crust mixture.
  4. Generously coat the roast with the herb mixture.
  5. Optional: Sear the roast in a hot skillet for 2-3 minutes on each side.
  6. Place the roast in the oven for 15 minutes, then reduce the temperature to 325°F (163°C) and cook until desired doneness.
  7. Rest the roast for 15-20 minutes before carving.
  8. Optional: Deglaze the pan with red wine to make a sauce while the roast rests.
  9. Carve against the grain and serve.
