High Protein Lasagna Soup

A comforting and nutritious twist on classic lasagna, this hearty soup is easy to prepare and perfect for chilly evenings.

  • 1 lb ground turkey or chicken
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 2 cups lasagna noodles, broken into pieces
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large pot, heat a splash of olive oil over medium heat. Add the ground turkey and cook until browned, about 5-7 minutes.
  2. Toss in the diced onion and minced garlic, cooking until softened, roughly another 3-4 minutes.
  3. Stir in the crushed tomatoes, broth, and Italian seasoning. Bring to a gentle boil for about 2-3 minutes.
  4. Add broken lasagna noodles and cook according to the package instructions, about 8-10 minutes.
  5. Once the pasta is just cooked, stir in the ricotta cheese and adjust the seasoning with salt and pepper.
  6. Ladle soup into bowls, topping each with shredded mozzarella and fresh basil.

Notes

Ingredient quality matters; using fresh garlic and quality tomatoes elevates the flavor. This soup freezes well, but noodles may become softer upon reheating.
