Delightful Holiday Cranberry Salad

A festive salad bursting with tart cranberries, crunchy pecans, and the sweetness of gelatin, perfect for holiday gatherings.

  • 2 (12-ounce) packages fresh cranberries, washed and drained
  • 1 large red apple, unpeeled and chopped
  • 2 Navel oranges, peeled and segmented
  • 3 cups granulated sugar
  • 3 (3-ounce) boxes strawberry gelatin
  • 4 cups boiling water
  • 1 to 1-1/2 cups chopped pecans

Instructions

  1. In a food processor, grind the cranberries, apple, and oranges into small segments.
  2. Transfer the mixture to a large mixing bowl and sprinkle sugar over the cranberries. Let set for 10 minutes.
  3. Dissolve the strawberry gelatin in 4 cups of hot water and let cool to room temperature.
  4. Pour the cooled gelatin over the cranberry mixture and stir until well combined.
  5. Gently fold in the chopped pecans.
  6. Transfer to a 1-gallon container with a lid and refrigerate for at least 12 hours.
  7. Serve chilled in a bowl, and store any leftovers in the refrigerator.

Notes

For a smoother salad, pulse the fruit instead of grinding. Make sure to use fresh cranberries for optimal texture.
