  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups cooked chicken, shredded
  • 1 package (16 oz) gnocchi
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prep Your Ingredients: Gather all your chopped veggies and shredded chicken.
  2. Sauté the Veggies: Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté for 5–7 minutes until tender.
  3. Add the Herbs: Stir in thyme and oregano for 1 minute.
  4. Simmer the Soup: Pour in chicken broth and bring to a gentle boil for about 5 minutes.
  5. Cook the Gnocchi: Add gnocchi and cook according to package instructions, usually 2–3 minutes.
  6. Cream it Up: Stir in heavy cream and shredded chicken; heat through for 2–3 minutes.
  7. Season it Right: Taste and adjust seasoning with salt and pepper.
  8. Serve it Hot: Pour into bowls and garnish with fresh parsley.

Notes

For gluten-free, use gluten-free gnocchi. Leftovers can be stored in the fridge for up to 3 days.
