Honey Glazed Carrots & Chicken

A delightful blend of tender chicken breasts and sweet, caramelized carrots in a flavorful honey glaze.

  • 34 boneless, skinless chicken breasts
  • 4 cups fresh carrots, sliced
  • 1/4 cup pure honey
  • 2 tablespoons low-sodium soy sauce
  • 23 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish.
  2. Season the chicken breasts generously with salt and pepper on both sides.
  3. In a medium bowl, whisk together the honey, soy sauce, minced garlic, and olive oil.
  4. Toss the sliced carrots in olive oil and a pinch of salt and arrange around the chicken in the baking dish.
  5. Pour half of the glaze over the chicken and carrots, saving the rest for basting.
  6. Bake for 25-30 minutes until chicken reaches 165°F (74°C), basting halfway through with reserved glaze.

Notes

This dish can be made a day in advance for better flavor. Consider substituting carrots with seasonal vegetables for variety.
