4 cups cold water
2 tablespoons white vinegar
1 tablespoon salt (plus more for seasoning)

Instructions
Prep Potatoes: Peel potatoes and cut into 1/4-inch thick sticks. Soak in cold water with vinegar for 30 minutes to remove starch.
First Fry (Blanching): Drain and pat dry thoroughly. Heat oil to 325°F (160°C). Fry potatoes in batches for 4-5 minutes until soft but not browned. Drain on paper towels.
Cool: Let fries cool completely (can refrigerate for 1 hour or freeze for 15 minutes).
Second Fry (Crisping): Heat oil to 375°F (190°C). Fry again in batches for 2-3 minutes until golden and crispy. Drain on fresh paper towels.
Season: Immediately toss with salt while hot. Serve immediately.
