Perfect French Fries (Double-Fried Crispy Secret!)

Homemade perfect French fries with crispy edges and fluffy interior.

Crispy golden French fries with a fluffy interior, made using a double-fry technique for maximum crunch. Perfect as a side or snack.

Ingredients

Scale
  • 4 large russet potatoes (about 2 lbs)
  • 4 cups cold water
  • 2 tablespoons white vinegar
  • 1 tablespoon salt (plus more for seasoning)
  • 4 cups peanut oil or vegetable oil (for frying)

Instructions

  1. Prep Potatoes: Peel potatoes and cut into 1/4-inch thick sticks. Soak in cold water with vinegar for 30 minutes to remove starch.
  2. First Fry (Blanching): Drain and pat dry thoroughly. Heat oil to 325°F (160°C). Fry potatoes in batches for 4-5 minutes until soft but not browned. Drain on paper towels.
  3. Cool: Let fries cool completely (can refrigerate for 1 hour or freeze for 15 minutes).
  4. Second Fry (Crisping): Heat oil to 375°F (190°C). Fry again in batches for 2-3 minutes until golden and crispy. Drain on fresh paper towels.
  5. Season: Immediately toss with salt while hot. Serve immediately.

Notes

  • Russet potatoes work best for fluffy interiors
  • Double-frying is key for perfect texture
  • Don’t overcrowd the fryer – cook in batches
  • For extra crispiness, soak potatoes overnight
  • Add seasonings like garlic powder or paprika for variation
