Chocolate Mousse Brownies

  • 4 large eggs (room temperature)
  • 1 teaspoon vanilla extract

  • 1 cup unsweetened cocoa powder

  • 1 cup heavy cream
  • 8 oz semi-sweet chocolate (melted)
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Melt the unsalted butter in a saucepan over low heat, stirring in the sugar until combined.
  3. Remove from heat, let cool slightly, whisk in eggs one at a time, and add vanilla extract.
  4. Sift flour, cocoa powder, and salt in another bowl, then gradually mix into wet ingredients until just combined.
  5. Pour batter into the prepared pan and bake for 25-30 minutes. Let cool completely.
  6. Whip heavy cream until soft peaks form, then gently fold in melted chocolate and powdered sugar.
  7. Spread mousse over cooled brownies and chill in the refrigerator for at least 2 hours.
  8. Serve chilled, garnished with toppings like shaved chocolate or whipped cream.

Notes

Store in the fridge for up to 5 days. For best results, allow to sit at room temperature for 10 minutes before serving.
