Easy Instant Pot Beets

Effortlessly cook vibrant and earthy beets in your Instant Pot, preserving their natural sweetness and color in just minutes.

Ingredients

  • 56 medium-sized beets
  • 1 cup water
  • Instant Pot trivet

Instructions

  1. Cut away the stems and leaves from the beets, saving the greens for other uses.
  2. Place the trivet in the Instant Pot and add 1 cup of water.
  3. Arrange the washed beets on top of the trivet.
  4. Cook for 10-25 minutes on HIGH pressure based on the size of the beets.
  5. Let the pressure naturally release for 10-15 minutes.
  6. Transfer cooked beets to a plate or ice bath to cool before peeling.
  7. Peel the skins off the beets once cooled.

Notes

For extra flavor, add orange juice or lemon zest to the water before cooking. Cooked beets can be stored in the fridge for up to a week or frozen for 12 months.
