  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1.5 pounds fresh mushrooms, sliced
  • 4 cups chicken broth (or vegetable broth)
  • 1.5 teaspoons dried thyme
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt (to taste)
  • 1/2 teaspoon black pepper
  • 4 tablespoons all-purpose flour
  • 1 cup heavy cream

Instructions

  1. Sauté the butter in the Instant Pot and add the onion and garlic, cooking until fragrant.
  2. Cook the mushrooms for about 2-3 minutes until they start to brown.
  3. Add the chicken or vegetable broth, thyme, Worcestershire sauce, salt, and pepper. Stir to combine.
  4. Pressure cook on high for 5 minutes, then naturally release pressure for 10 minutes.
  5. Thicken the soup by whisking the flour into the cream, then stir it into the soup while simmering.
  6. Season to taste and adjust salt or pepper if needed.

Notes

For a dairy-free version, substitute heavy cream with coconut cream and use vegetable broth.
