A classic Chicago-style Italian beef sandwich featuring thinly sliced roast beef simmered in a savory, garlicky au jus with Italian spices, served on crusty bread with giardiniera or sweet peppers. This slow-cooked version delivers tender, flavorful meat perfect for crowds.

  • 1 tbsp kosher salt
  • 1 tbsp black pepper
  • 1 tbsp dried oregano
  • 1 tbsp dried basil
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp red pepper flakes
  • 4 cups beef broth
  • 1 cup water
  • 1 onion (sliced)
  • 1 green bell pepper (sliced)
  • 6 garlic cloves (minced)
  • 2 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 68 crusty Italian rolls
  • 1 cup giardiniera (hot or mild)
  • 1 cup sweet bell peppers (optional)

Instructions

  1. Season the beef: Rub roast with olive oil, then coat evenly with salt, pepper, oregano, basil, garlic powder, onion powder, and red pepper flakes.
  2. Sear the beef: In a large Dutch oven over high heat, sear roast on all sides until deeply browned (about 3-4 minutes per side). Remove and set aside.
  3. Sauté vegetables: In same pot, cook onions and bell peppers until softened (5 minutes). Add garlic and cook 1 minute more.
  4. Simmer: Return beef to pot. Add beef broth, water, Worcestershire, and soy sauce. Bring to boil, then reduce heat to low. Cover and simmer 3-4 hours until fork-tender.
  5. Shred the beef: Remove beef and let rest 15 minutes. Thinly slice against grain or shred with forks. Skim fat from cooking liquid.
  6. Combine: Return sliced beef to pot with juices. Simmer 30 minutes more to absorb flavors.
  7. Serve: Pile beef onto rolls dipped in jus. Top with giardiniera and/or sweet peppers. Serve with extra jus for dipping.

  • For authentic Chicago style, ask your deli to thinly slice the cooked beef
