Instant Pot Mashed Potatoes

Creamy, fluffy mashed potatoes made effortlessly in the Instant Pot – perfectly cooked every time with minimal hands-on work for the ultimate comfort food side dish!

Ingredients

4 pounds Yukon Gold potatoes

6 cups water:

4 teaspoons sea salt (divided)

3 cloves garlic (grated)

⅓ cup extra-virgin olive oil

¼ cup unsalted butter

Freshly ground black pepper

Chives (for garnish)

Instructions

  1. Place trivet in Instant Pot. Add potatoes and water/broth.
  2. Secure lid, set valve to sealing. Cook on HIGH pressure 10 minutes.
  3. Quick release pressure. Drain potatoes, reserving 1/4 cup cooking liquid.
  4. Return potatoes to pot. Add butter, milk, salt and pepper. Mash to desired consistency, adding reserved liquid as needed.
  5. For extra creaminess, stir in sour cream if using. Adjust seasoning.
  6. Garnish with chives and serve hot with extra butter.

Notes

  • For garlic mashed, add 4 peeled garlic cloves with potatoes
  • Can substitute russet potatoes (peeling recommended)
  • Keep warm on “Keep Warm” setting for up to 1 hour
  • Freezes well – reheat with splash of milk
