Irish Boiled Dinner (Corned Beef)

A heartwarming Irish Boiled Dinner featuring tender corned beef paired with sweet carrots, hearty potatoes, and crunchy cabbage, perfect for family gatherings.

  • 1 (5 1/2-pound) corned beef brisket
  • 2 large onions, sweet or yellow
  • 10 carrots, cut into 1-inch pieces
  • 2 heads of cabbage, cored and cut into wedges
  • 15 small white potatoes or Yukon Gold potatoes

Instructions

  1. Rinse the corned beef under cold water and place it in a large pot.
  2. Fill the pot with enough water to cover the meat by 6 inches. Add the onions.
  3. Bring the pot to a vigorous boil and let boil for about 30 minutes.
  4. Reduce the heat to medium-low, cover, and simmer gently for 3 1/2 hours.
  5. Carefully add the carrots, cabbage, and potatoes to the pot and cook for an additional 30 minutes.
  6. Remove the corned beef to a cutting board to rest for 10 minutes before slicing against the grain. Serve with vegetables and broth.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months. For more flavor, add bay leaves and whole peppercorns during simmering.
