Italian-Inspired Beans and Greens

A comforting dish combining hearty greens and creamy white beans for a soul-warming meal.

Ingredients

  • 2 cans white beans (cannellini or great northern), drained and rinsed
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bunch kale or Swiss chard, chopped
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Red pepper flakes (optional)
  • Grated Parmesan cheese (for serving, optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Add the diced onion and garlic, sautéing until translucent and fragrant.
  3. Gently stir in chopped kale or Swiss chard and cook until just wilted.
  4. Stir in drained beans, vegetable broth, oregano, salt, and pepper. Bring to a simmer and cook uncovered for 15-20 minutes.
  5. Sprinkle in red pepper flakes if desired, adjust seasoning, and serve warm topped with grated Parmesan.

Notes

For a creamier texture, mash a portion of the beans before adding them back. Store leftovers in an airtight container for up to three days.
