  • 1 lb Italian Sausage, casings removed
  • 1 lb Gnocchi
  • 1 tablespoon dried Oregano
  • 2 cups Fresh Spinach, chopped
  • 1 medium Onion, diced
  • 4 cloves Garlic, minced
  • 4 cups Chicken Broth
  • 1 cup Heavy Cream
  • 1 cup Parmesan Cheese, grated
  • Salt & Pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add Italian sausage and cook until browned, about 5-7 minutes.
  3. Stir in diced onion and minced garlic; cook for another 3-4 minutes.
  4. Add oregano and cook for an additional minute.
  5. Pour in chicken broth and bring to a rolling boil (about 5 minutes).
  6. Once boiling, add gnocchi and cook according to package instructions (3-5 minutes).
  7. Stir in heavy cream and fresh spinach; cook until the spinach wilts (2-3 minutes).
  8. Season with salt and pepper; stir well.
  9. Serve hot, garnished with freshly grated parmesan cheese.

Notes

Watch the garlic to avoid burning for a better flavor. This soup can be refrigerated for 3-4 days.
