Hearty Italian Sausage Soup

A comforting bowl of flavor that combines savory sausage, sweet potatoes, and vibrant greens.

  • 1 pound Italian Sausage
  • 2 medium Sweet Potatoes, diced
  • 1 Onion, chopped
  • 46 cloves Garlic, minced
  • 2 Carrots, diced
  • 2 stalks Celery, chopped
  • 6 cups low-sodium Chicken Broth
  • 1 can (28 oz) Canned Tomatoes (preferably San Marzano)
  • 2 cups Fresh Spinach
  • Salt & Pepper to taste
  • 2 teaspoons Italian Seasoning

Instructions

  1. In a large pot, heat the Italian sausage over medium heat, breaking it apart as it cooks for 5-7 minutes until browned.
  2. Add the chopped onion, minced garlic, diced carrots, and chopped celery. Sauté for 4-5 minutes until the onions are translucent.
  3. Stir in the diced sweet potatoes, then pour in the chicken broth and canned tomatoes. Season with salt, pepper, and Italian seasoning. Bring to a gentle boil.
  4. Lower the heat and allow to simmer uncovered for 15-20 minutes until the sweet potatoes are tender.
  5. Stir in fresh spinach just before serving.

Notes

This soup can be stored in the fridge for up to 4 days and freezes well for up to 3 months. Add a splash of balsamic vinegar or pesto for extra flavor before serving.
