Hearty Italian Sausage Soup

A comforting Italian sausage soup filled with robust flavors, perfect for chilly evenings.

  • 1 lb Italian sausage
  • 1 can (14.5 oz) fire-roasted tomatoes
  • 6 cups chicken or vegetable broth
  • 1 diced onion
  • 2 minced garlic cloves
  • 2 diced carrots
  • 2 stalks diced celery
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • 1 cup ditalini pasta
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. In a large pot, heat a tablespoon of olive oil over medium heat. Crumble the Italian sausage into the pot and cook for 7-10 minutes until browned.
  2. Add the diced onion, minced garlic, diced carrots, and diced celery. Cook for an additional 5-7 minutes until softened.
  3. Stir in the fire-roasted tomatoes, oregano, and basil, cooking for 2 minutes.
  4. Pour in the broth and bring to a boil, then reduce heat to a simmer.
  5. Add the ditalini pasta and cook for 8-10 minutes until al dente.
  6. Season with salt and pepper to taste. Serve hot, garnished with fresh basil if desired.

Notes

For a thicker soup, add more tomatoes or a dollop of tomato paste. Adjust seasonings as necessary.
