Deliciously Comforting Italian Sausage Soup

A hearty Italian Sausage Soup that is rich in flavor, made with fresh ingredients and perfect for family gatherings.

  • 1 lb Italian Sausage
  • 3 medium Potatoes, diced
  • 1 Onion, chopped
  • 2 Carrots, chopped
  • 2 Celery stalks, chopped
  • 3 cloves Garlic, minced
  • 1 can Diced Tomatoes (no salt added)
  • 6 cups Chicken Broth
  • 2 tsp Italian Seasoning
  • Salt & Pepper to taste
  • 2 cups Spinach or Kale (optional)

Instructions

  1. In a large pot over medium heat, add the Italian sausage and cook until fully browned, about 5–7 minutes.
  2. Remove the sausage from the pot and set aside, leaving the drippings.
  3. Add the chopped onions, carrots, and celery to the same pot, cooking until softened, about 4–5 minutes.
  4. Stir in the minced garlic and cook for an additional minute.
  5. Add the diced potatoes, chicken broth, diced tomatoes, Italian seasoning, salt, and pepper into the pot.
  6. Bring the mixture to a boil, then lower the heat and let it simmer for 15–20 minutes until the potatoes are tender.
  7. Reintroduce the sausage and add spinach or kale, cooking for another 5 minutes.
  8. Ladle into bowls and serve hot.

Notes

This soup can be stored in airtight containers in the fridge for 3-4 days or frozen for up to 3 months. Consider serving with crusty Italian bread or salad.
