Savory Italian Sausage Stuffed Acorn Squash

A cozy fall dish featuring acorn squashes stuffed with savory Italian sausage, rice, and aromatic vegetables.

  • 2 acorn squashes
  • 1 pound Italian sausage
  • 1 cup cooked rice
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the acorn squashes in half, scoop out the seeds, and brush the insides with olive oil. Season with salt and pepper and roast cut-side down on a baking sheet for 25-30 minutes.
  3. In a skillet, cook the Italian sausage over medium heat until browned (about 8-10 minutes) and set aside.
  4. In the same skillet, sauté the chopped onion, celery, and minced garlic until softened (about 5 minutes).
  5. Stir in the cooked rice, cooked sausage, and thyme. Season with salt and pepper, and cook for another 2-3 minutes.
  6. Turn the roasted squashes cut-side up, fill with the sausage and rice mixture, and return to the oven to bake for 15-20 minutes.
  7. Remove from the oven and serve warm.

Notes

Avoid overcooking the squashes to prevent mushiness. You can prepare the filling a day in advance.
