A vibrant dish that combines creamy macaroni salad with the spicy zest of jalapeño poppers, perfect for family gatherings and BBQs.

  • 3 cups elbow macaroni (cooked and cooled)
  • 8 ounces cream cheese (softened)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon (crumbled)
  • 23 fresh jalapeños (finely chopped, seeds removed)
  • 1/4 cup chopped green onions
  • Optional extra bacon crumbles
  • Optional jalapeño slices for garnish

Instructions

  1. Cook the macaroni: Boil water in a large pot, add salt, and cook elbow macaroni until al dente (8-10 minutes). Drain and rinse under cold water. Set aside.
  2. Prepare the dressing: In a mixing bowl, combine softened cream cheese, mayonnaise, sour cream, garlic powder, salt, and black pepper. Blend until smooth.
  3. Mix it up: Fold cooled macaroni into the dressing, then add cheddar cheese, crumbled bacon, chopped jalapeños, and green onions. Toss gently.
  4. Let it chill: Cover and refrigerate for at least 1 hour to meld flavors.
  5. Serve: Toss salad again, adjust seasoning, garnish if desired, and serve chilled.

Notes

Use high-quality mayonnaise for the best flavor. Remove jalapeño seeds for less heat.
