  • 1 lb chicken breast, thinly sliced
  • 2 cups bok choy, chopped
  • 1/4 cup soy sauce or tamari
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1/2 teaspoon black pepper
  • 1 tablespoon sesame oil
  • Low-carb coating (like almond flour or coconut flour)

Instructions

  1. In a bowl, combine the thinly sliced chicken breast with the low-carb coating and black pepper.
  2. Place a large skillet or wok over medium-high heat and add the olive oil. Let it heat for about 1-2 minutes.
  3. Add the minced garlic and ginger to the skillet. Sauté for about 30 seconds until fragrant.
  4. Add the coated chicken to the skillet. Cook for about 5-7 minutes, stirring occasionally until browned and fully cooked.
  5. Remove the chicken from the skillet and set aside on a plate, covered with foil.
  6. In the same skillet, add the chopped bok choy and soy sauce. Stir-fry for approximately 2-3 minutes until wilted but still crisp.
  7. Return the cooked chicken to the skillet with bok choy. Drizzle with sesame oil and stir well.
  8. Serve hot and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. You can coat the chicken ahead of time to speed up cooking.
