Zesty Key Lime Pie Bars

A delightful twist on the classic Key Lime Pie, these bars feature a unique crust made from Ritz crackers and a creamy key lime filling.

  • 1 cup Ritz crackers, crushed
  • 1/2 cup graham cracker crumbs
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup key lime juice
  • 1 teaspoon lime zest
  • 2 large eggs
  • Whipped cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the crust: In a mixing bowl, combine the crushed Ritz crackers, graham cracker crumbs, brown sugar, and melted butter. Mix until fully incorporated, then press firmly into the bottom of an 8×8 inch baking dish.
  3. Make the filling: In a separate bowl, whisk together the sweetened condensed milk, key lime juice, lime zest, and eggs until smooth.
  4. Combine and bake: Pour the key lime filling over the crust and bake for about 20-25 minutes until the edges are set but the center jiggles slightly.
  5. Cool it down: Allow to cool at room temperature for at least 30 minutes, then refrigerate for at least 2 hours before slicing into bars.
  6. Serve: Top with whipped cream and enjoy!

Notes

For best results, use fresh key limes. These bars can be stored in an airtight container in the fridge for up to a week or frozen for up to three months.
