Hearty Kielbasa Soup

A comforting bowl of Kielbasa Soup filled with savory sausage, hearty potatoes, and vibrant greens, perfect for chilly winter nights.

  • 1 pound kielbasa sausage, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 2 medium Yukon Gold potatoes, chopped
  • 2 cups green or savoy cabbage, roughly chopped
  • 2 cups fresh spinach
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon dried thyme
  • Olive oil, for sautéing

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté the chopped onions and minced garlic until translucent, about 5 minutes.
  2. Add the sliced kielbasa to the pot and cook for another 5-7 minutes until browned.
  3. Toss in the chopped potatoes and sauté for another 3-4 minutes.
  4. Add the chicken broth, chopped cabbage, spinach, salt, pepper, and thyme. Stir everything together.
  5. Increase heat to high and bring the soup to a boil. Then reduce heat to low and let it simmer for 20-25 minutes, or until the potatoes are tender.
  6. Serve hot, garnished with fresh parsley if desired.

Notes

This soup tastes even better the next day. Store leftovers in an airtight container for up to 4-5 days or freeze for up to 3 months.
