Divine Lavender Scones

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp dried lavender buds
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1/3 cup cold butter, cubed
  • 1/2 cup buttermilk or substitute
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 425°F.
  2. Prepare a baking sheet with parchment paper.
  3. Mix the flour, sugar, lavender buds, baking powder, salt, and baking soda in a large bowl.
  4. Cut in the cold butter until it resembles coarse cornmeal.
  5. Combine vanilla with buttermilk, reserving 2 tablespoons.
  6. Mix the buttermilk mixture into dry ingredients until just combined.
  7. Shape the dough on a floured surface and pat into a rectangle about 1-inch thick.
  8. Cut the rectangle into triangles to form eight scones.
  9. Transfer to the baking sheet, brush with reserved buttermilk, and sprinkle with sugar.
  10. Bake for 15 minutes or until golden brown.
  11. Cool on a wire rack before serving.

Notes

These scones are perfect for serving with clotted cream and homemade jam.
