Zesty Lemon Chia Seed Pudding

A refreshing and nutritious lemon chia seed pudding that combines creamy coconut milk and tangy lemon for a delightful dessert or snack.

  • 1 1/2 cups full-fat coconut milk
  • 1/4 cup fresh lemon juice
  • 1 tablespoon finely grated lemon zest
  • 3 tablespoons maple syrup or honey
  • 1 teaspoon pure vanilla extract
  • 1/2 cup chia seeds
  • Pinch of sea salt
  • Optional: 1/16 teaspoon ground turmeric
  • Optional: 1-2 drops yellow gel food coloring

Instructions

  1. In a mixing bowl or large jar, whisk together the coconut milk, lemon juice, lemon zest, maple syrup or honey, vanilla extract, and sea salt until fully combined.
  2. Stir in the chia seeds thoroughly. Allow the mixture to sit for 5 minutes to let the chia seeds start to gel.
  3. Cover the bowl or jar and refrigerate for at least 3 hours or overnight.
  4. Before serving, stir the pudding to break up any clumps, spoon it into jars or bowls, and add your favorite toppings.

Notes
