  • 1/4 teaspoon baking powder

  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tablespoons fresh lemon juice
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 23 tablespoons fresh lemon juice (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream together butter and granulated sugar until light and fluffy.
  4. Add the egg, lemon juice, lemon zest, and vanilla extract, mixing until combined.
  5. Gradually add the dry ingredients, mixing until a dough forms.
  6. Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until edges are lightly golden.
  8. Meanwhile, prepare the icing by mixing powdered sugar with lemon juice until smooth.
  9. Drizzle icing over cooled cookies and allow to set before serving.

Notes

Store cookies in an airtight container at room temperature for up to 1 week. They also freeze well.
