Zesty Lemon Squares

Delightful homemade Lemon Squares featuring a buttery crust and zesty lemon filling, perfect for any occasion.

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. In a bowl, mix together flour, powdered sugar, and softened butter until crumbly. Press into the bottom of the prepared pan.
  3. Bake for 15 minutes until lightly golden.
  4. In another bowl, whisk together eggs, granulated sugar, lemon juice, lemon zest, salt, and baking powder until combined.
  5. Pour the lemon mixture over the hot crust and return to the oven.
  6. Bake for an additional 20-25 minutes until the filling is set and edges are slightly golden.
  7. Cool completely on a wire rack, dust with powdered sugar, cut into squares, and serve.

Notes

Store in an airtight container at room temperature for up to 2 days or in the refrigerator for about a week.
