Light & Fluffy Yogurt Cloud Cake

  • 1 cup plain yogurt
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 4 large eggs (separated)
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon cream of tartar (optional)
  • Optional for serving: Heavy whipping cream, powdered sugar, lemon zest, fresh berries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, whisk yogurt, vegetable oil, vanilla extract, egg yolks, and sugar until smooth.
  4. Gradually stir in the dry ingredients until just combined.
  5. Whip the egg whites (and cream of tartar if using) until stiff peaks form.
  6. Gently fold the whipped egg whites into the batter in two batches.
  7. Pour the batter into the prepared pan and bake for 25-35 minutes or until a toothpick comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.
  9. Optional: Top with whipped cream and berries before serving.

Notes

Ensure eggs and yogurt are at room temperature for best results. Store leftovers at room temperature for 1 day or refrigerate for up to 3 days.
