Loaded Mini Nacho Bites

  • 1 lb Lean Ground Beef
  • 1 Packet (1 oz) Taco Seasoning
  • 2/3 cup Water
  • 1 Bag (10 oz) Tortilla Scoops
  • 1 Can (15 oz) Refried Beans
  • 2 Cups Shredded Mexican Cheese Blend
  • 1/2 Cup Diced Cooked Ham
  • 1/4 Cup Sliced Black Olives
  • 1/4 Cup Diced Red Onion
  • Sour Cream or Greek Yogurt, for Garnish
  • Guacamole or Diced Avocado, for Garnish
  • Salsa or Pico de Gallo, for Garnish
  • Fresh Cilantro, chopped, for Garnish
  • Sliced Jalapeños, for Garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium skillet, cook the ground beef over medium-high heat for 5-7 minutes, breaking it apart until browned.
  3. Stir in taco seasoning and water, and simmer for 3-4 minutes until thickened.
  4. Place the tortilla scoops on the baking sheet, facing up.
  5. Spoon refried beans into each tortilla scoop, followed by seasoned beef, diced ham, black olives, red onion, and shredded cheese.
  6. Bake in the oven for 5-8 minutes until cheese is bubbly and melted.
  7. Allow to cool slightly, then garnish with sour cream, guacamole, salsa, cilantro, and jalapeños.

Notes

For extra flavor, consider adding jalapeños or using vegetarian beans. Store any leftovers in an airtight container in the fridge.
