Perfect London Fog Cookies

Delightful cookies infused with Earl Grey tea and lavender, topped with luscious lavender cream cheese frosting.

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons Earl Grey tea leaves
  • 1 tablespoon dried lavender buds
  • 1 cup lavender cream cheese frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, beat the butter, brown sugar, and granulated sugar until creamy and light.
  4. Add the egg and vanilla extract, mixing until fully combined.
  5. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  6. Fold in the Earl Grey tea leaves and lavender buds.
  7. Scoop rounded portions of dough onto the baking sheets, spacing them apart.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
  10. Once cool, frost each cookie with lavender cream cheese frosting.

Notes

Ensure your butter is softened but not melted for the correct texture. Store in an airtight container for up to a week, or freeze for 2-3 months.
