Marry Me Chicken Soup

A comforting blend of succulent chicken, creamy broth, and vibrant spinach, perfect for cozy nights.

Ingredients

  • 2 skinless, boneless chicken breasts
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup rotini or penne pasta
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons extra virgin olive oil

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat until shimmering.
  2. Add the chopped onion and sauté for about 3-4 minutes, or until translucent and fragrant.
  3. Stir in the minced garlic and cook for another 30 seconds until fragrant but not browned.
  4. Add the chicken breasts to the pot and cook for 4-5 minutes on each side until browned.
  5. Pour in the chicken broth, scraping the bottom of the pot to deglaze it, and bring to a gentle simmer.
  6. Stir in the pasta and cook according to package instructions, about 8-10 minutes.
  7. Once the pasta is cooked, reduce the heat and stir in the heavy cream, spinach, and sun-dried tomatoes.
  8. Season with salt and pepper to taste, stirring until the spinach wilts and everything is heated through, about 2-3 minutes.
  9. Ladle the soup into bowls and enjoy warm.

Notes

For a thicker soup, simmer longer or add a tablespoon of cornstarch mixed in cold water.
