  • 2 tablespoons Olive Oil
  • Salt (to taste)
  • Pepper (to taste)
  • 1 cup Tomatoes (canned or fresh)
  • 1/2 cup Heavy Cream
  • 1/3 cup Fresh Basil (chopped)
  • 2 cloves Garlic (minced)
  • 1 medium Onion (chopped)
  • 1/2 cup Parmesan Cheese (grated)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Generously season the pork tenderloin with salt and pepper.
  3. In a large, oven-safe skillet, add olive oil and sear the pork tenderloin on all sides until golden brown, about 3-4 minutes per side.
  4. Transfer the pork to a plate and let it rest.
  5. Sauté onions and garlic in the same skillet until translucent, about 5 minutes.
  6. Add tomatoes and heavy cream, stirring until well combined.
  7. Stir in fresh basil and parmesan cheese until melted.
  8. Return the pork to the skillet, spooning some sauce over it.
  9. Bake for 20-25 minutes until the pork reaches an internal temperature of 145°F (63°C).
  10. Let the pork rest for 5-10 minutes, then slice and serve with the creamy sauce.

Notes

This dish can be customized with vegetables or spices to suit personal preferences. Allowing the pork to rest after cooking will ensure juiciness.
