Marry Me Pork Tenderloin

A heartwarming dish of tender pork tenderloin in a rich, creamy sauce with cherry tomatoes and Italian seasoning, perfect for impressing your loved ones.

  • 1 pound pork tenderloin
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium-high heat. Season the pork with salt and pepper, then sear until browned on all sides, about 3-4 minutes per side.
  3. Remove pork from the skillet and place it in a baking dish.
  4. In the same skillet, add minced garlic and cook until fragrant (about 30 seconds). Add halved cherry tomatoes and cook until softened (2-3 minutes).
  5. Pour in heavy cream and stir in Italian seasoning. Allow the mixture to thicken slightly.
  6. Pour the creamy tomato sauce over the pork in the baking dish, making sure it’s covered. Bake for 20-25 minutes or until the pork reaches an internal temperature of 145°F (63°C).
  7. Garnish with fresh basil leaves before serving.

Notes

For maximum flavor, don’t skip the searing step. Use a meat thermometer to ensure perfect doneness.
