Marry Me Salmon

Pan-seared salmon fillets smothered in a rich, creamy sun-dried tomato and garlic sauce with fresh herbs. An elegant yet easy dish perfect for date nights or special occasions!

Ingredients

  • 4 (6 oz) salmon fillets, skin-on
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1/2 cup sun-dried tomatoes in oil, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup fresh basil, chopped
  • 1 tbsp lemon juice

Instructions

  1. Pat salmon dry and season with salt and pepper.
  2. Heat oil in large skillet over medium-high. Sear salmon skin-side down 4-5 mins until crispy. Flip and cook 2-3 mins more. Remove and set aside.
  3. In same skillet, sauté garlic 30 seconds until fragrant. Add sun-dried tomatoes and cook 1 minute.
  4. Pour in cream and broth, scraping up browned bits. Simmer 3-4 mins until slightly thickened.
  5. Stir in Parmesan, Italian seasoning, and red pepper flakes until cheese melts.
  6. Return salmon to skillet. Spoon sauce over fillets. Simmer 2 mins to heat through.
  7. Remove from heat. Stir in basil and lemon juice. Serve immediately.

Notes

  • For extra flavor: Use oil from sun-dried tomatoes for searing
  • Make ahead: Sauce can be prepared 2 days in advance
  • Side suggestions: Serve over mashed potatoes, pasta, or roasted asparagus
  • Storage: Leftovers keep refrigerated 3 days (reheat gently)
