4 (6 oz) salmon fillets, skin-on
1 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
3 garlic cloves, minced
1/2 cup sun-dried tomatoes in oil, chopped
1 cup heavy cream
1/2 cup chicken or vegetable broth
1/2 cup grated Parmesan cheese
1 tsp Italian seasoning
1/4 tsp red pepper flakes (optional)
1/4 cup fresh basil, chopped
1 tbsp lemon juice
Instructions
Pat salmon dry and season with salt and pepper.
Heat oil in large skillet over medium-high. Sear salmon skin-side down 4-5 mins until crispy. Flip and cook 2-3 mins more. Remove and set aside.
In same skillet, sauté garlic 30 seconds until fragrant. Add sun-dried tomatoes and cook 1 minute.
Pour in cream and broth, scraping up browned bits. Simmer 3-4 mins until slightly thickened.
Stir in Parmesan, Italian seasoning, and red pepper flakes until cheese melts.
Return salmon to skillet. Spoon sauce over fillets. Simmer 2 mins to heat through.
Remove from heat. Stir in basil and lemon juice. Serve immediately.
Notes
For extra flavor: Use oil from sun-dried tomatoes for searing
