Matcha Strawberry Cookies

Delightful cookies merging the earthy flavors of matcha with the sweetness of fresh strawberries.

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tablespoon matcha powder
  • 1/2 cup strawberries, chopped
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the butter and sugars together until light and fluffy, about 2-3 minutes.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. Whisk the flour, matcha powder, salt, and baking powder in a separate bowl.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Fold in the chopped strawberries gently.
  7. Drop spoonfuls of dough onto the prepared baking sheet, spacing them 2 inches apart.
  8. Bake for 10-12 minutes, or until edges are golden and center is soft.
  9. Cool on the baking sheet for 2-3 minutes before transferring to a wire rack.

Notes

For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend. Store cookies in an airtight container for up to 4 days.
