Meal Prep Breakfast Bowls

Hearty and customizable breakfast bowls filled with eggs, sausage, peppers, and crispy potatoes, perfect for meal prepping.

Ingredients

  • 8 Large Eggs
  • 1 lb Breakfast Sausage
  • 2 Medium Potatoes
  • 1 Medium Onion
  • 1 Bell Pepper (any color)
  • Salt & Pepper to taste
  • 2 tbsp Olive Oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Dice the potatoes and onions and sauté in 1 tablespoon of olive oil for about 15 minutes until golden brown.
  3. In another pan, heat the remaining olive oil and cook the sausage until browned, then add chopped bell peppers and sauté for another 3-4 minutes.
  4. Whisk the eggs with salt and pepper, then scramble in a non-stick skillet over medium-low heat until just set.
  5. Assemble the bowls by layering the potato and onion mixture, sausage and peppers, and finishing with the scrambled eggs.
  6. Seal with lids and store in the fridge.

Notes

These bowls can be reheated by microwaving for 1-2 minutes. Store for up to 4 days in the fridge or freeze for up to 3 months.
