For the meatloaf:
1 lb ground beef (85% lean)
1 lb ground pork
1 cup breadcrumbs
1 small onion, finely diced
2 cloves garlic, minced
1 egg
¼ cup ketchup
1 tbsp Worcestershire sauce
1 tsp salt
½ tsp black pepper
1 tsp dried thyme
For the potato frosting:
2 large russet potatoes, peeled and cubed
¼ cup milk
2 tbsp butter
½ tsp salt
¼ tsp black pepper
For garnish (optional):
Paprika
Fresh parsley, chopped
Additional ketchup for piping
Instructions
Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
In large bowl, mix all meatloaf ingredients until just combined (don’t overmix).
Divide mixture evenly among muffin cups, pressing down lightly.
Bake for 20-25 minutes until internal temperature reaches 160°F.
While baking, boil potatoes until tender (15 mins). Drain and mash with milk, butter, salt and pepper until smooth.
Transfer mashed potatoes to piping bag with star tip (or use ziplock with corner cut).
Let meatloaf cupcakes cool 5 minutes, then pipe mashed potatoes on top.
Garnish with paprika, parsley, or ketchup designs if desired.
Notes
For leaner version, use ground turkey instead of pork/beef
Make ahead tip: Prepare meat mixture and potatoes 1 day in advance
