  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 bell pepper (any color), diced
  • 1 cup Kalamata olives, pitted
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • For the Dressing:
  • 1/4 cup extra virgin olive oil
  • 3 tbsp fresh lemon juice
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional additions: chickpeas, pepperoncini, artichoke hearts

Instructions

  1. In a large salad bowl, combine romaine, tomatoes, cucumber, red onion, bell pepper, and olives.
  2. In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper to make the dressing.
  3. Pour dressing over salad and toss gently to coat.
  4. Add feta cheese, parsley, and mint. Toss lightly.
  5. Serve immediately, or refrigerate for up to 1 hour before serving to allow flavors to meld.

  • For vegan version, omit feta or use vegan cheese
