Irresistible Miso Sweet Potatoes

Miso Sweet Potatoes combine the natural sweetness of sweet potatoes with the umami-packed miso paste for a comforting and gourmet side dish.

Ingredients

  • 4 small sweet potatoes (or 2 medium)
  • 1 tbsp miso paste
  • 1 tbsp coconut oil
  • 1 tbsp sriracha
  • 1 tbsp low-sodium soy sauce
  • 1 tbsp honey (or maple syrup for vegan alternative)
  • 1 tsp sesame oil
  • 1 tsp dried ginger
  • 2 scallions, sliced thinly
  • Toasted sesame seeds (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub sweet potatoes and prick them all over with a fork.
  3. Place sweet potatoes on a baking sheet or in an oven-safe skillet.
  4. Bake for 40 minutes, or until fork-tender.
  5. In a bowl, whisk together the miso paste, coconut oil, sriracha, soy sauce, honey, sesame oil, and ginger.
  6. Once the sweet potatoes are done, remove them from the oven.
  7. Cut sweet potatoes in half lengthwise and return them to the baking sheet, cut sides up.
  8. Brush the miso mixture generously over each sweet potato half.
  9. Return the pan to the broiler and monitor closely until caramelized, about 5 minutes.
  10. Remove from the oven and top each sweet potato half with sliced scallions and sprinkle with toasted sesame seeds.
