Muffin Tin Turkey & Stuffing Cups

Transform your Thanksgiving leftovers into delightful muffin-sized turkey and stuffing cups that are fun to make and even better to eat!

Ingredients

  • 2 cups leftover turkey, shredded
  • 2 cups stuffing mix
  • 1 cup gravy, for serving plus more for drizzling
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • Salt, pepper, and your choice of herbs (thyme or rosemary) to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin with cooking spray or butter.
  3. In a bowl, mix the shredded turkey, stuffing mix, eggs, milk, and melted butter until combined.
  4. Spoon the mixture into the greased muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes or until golden brown and firm.
  6. Remove from the oven and allow to cool for a few minutes before serving warm, topped with gravy.

Notes

Ensure butter is at room temperature before melting for even mixing. Store leftovers in an airtight container for up to 4 days.
