Heavenly Mushroom Gravy

A rich and flavorful mushroom gravy that balances savory notes with the earthiness of cremini mushrooms, perfect for drizzling over a variety of dishes.

  • 2 tablespoons extra-virgin olive oil
  • 1 shallot, finely chopped (⅓ cup)
  • 16 ounces cremini mushrooms, sliced
  • ½ tablespoon tamari
  • 2 garlic cloves, minced
  • 1½ tablespoons fresh thyme leaves
  • ½ tablespoon chopped fresh rosemary
  • ¼ cup all-purpose flour
  • 3 cups vegetable broth
  • Sea salt and freshly ground black pepper

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the finely chopped shallot and sauté for about 4 minutes until soft and translucent.
  2. Add the sliced cremini mushrooms to the skillet and cook until they shrink and turn golden-brown, about 8 to 10 minutes.
  3. Stir in the tamari, minced garlic, thyme, and rosemary, and cook for an additional minute.
  4. Sprinkle the flour over the mushroom mixture and stir for about 1 minute.
  5. Slowly add the vegetable broth while whisking continuously to prevent lumps. Allow the mixture to come to a simmer and cook until thickened, about 20 minutes.
  6. Season with sea salt and freshly ground black pepper to taste. Serve hot.

Notes

For best results, use fresh ingredients and adjust seasonings as per preference. Can be made ahead and frozen for convenience.
