  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 8 oz cremini mushrooms, finely chopped
  • 2 garlic cloves, minced
  • 1 shallot, minced
  • 1 tsp fresh thyme leaves
  • ½ tsp smoked paprika
  • 4 oz cream cheese, softened
  • ¼ cup grated Parmesan
  • 1 tbsp chopped parsley
  • 1 egg (for egg wash)
  • Salt and black pepper to taste
  • Optional: Truffle oil drizzle or prosciutto strips

Instructions

  1. Cook Filling: Heat butter and oil over medium. Sauté shallots 2 mins until soft. Add mushrooms, cook 8-10 mins until golden. Stir in garlic, thyme, paprika, salt, and pepper. Cool completely.
  2. Make Spread: Mix cream cheese, Parmesan, and parsley. Fold in cooled mushrooms.
  3. Assemble: Roll pastry to 10×12-inch rectangle. Spread filling evenly, leaving ½-inch border. Roll tightly from long side. Chill 30 mins.
  4. Slice & Bake: Cut into ½-inch rounds. Place on parchment-lined sheet. Brush with egg wash. Bake at 400°F (200°C) for 18-20 mins until golden.
  5. Serve: Garnish with extra thyme. Best served warm.
