Neiman Marcus Cookies

Easy and irresistible cookies with a rich buttery flavor, chewy oats, and delicious chocolate chunks.

  • 5 cups steel-cut oats or whole oats
  • 4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 cups butter, softened
  • 2 cups granulated sugar
  • 2 cups packed brown sugar
  • 4 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 24 ounces chocolate chips
  • 1 (8-ounce) Hershey’s Bar, grated
  • 3 cups nuts (walnuts or pecans)

Instructions

  1. Preheat the oven to 375°F.
  2. Place the oats in a food processor and blitz until they become a coarse powder. Combine them with flour, baking soda, baking powder, and salt in a large bowl.
  3. In a separate bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy (5-7 minutes).
  4. Add the eggs one by one, mixing for 10-15 seconds after each addition, then mix in the vanilla extract.
  5. Gradually pour the dry mixture into the wet ingredients, mixing just until combined.
  6. Fold in the chocolate chips, grated Hershey’s bar, and nuts.
  7. Roll the dough into 1-inch balls and space them 2 inches apart on a cookie sheet.
  8. Bake for about 10 minutes or until golden brown.
  9. Allow cookies to cool on the baking sheet for 10 minutes before transferring to a wire rack.

Notes

For even baking, rotate cookie sheets halfway through baking. For softer cookies, add a slice of bread to the container.
