Irresistible No-Bake Lime Cheesecake

A refreshing and creamy no-bake lime cheesecake that’s perfect for summer gatherings. No baking required, just chilling for a delightful dessert.

  • 200g Coconut Shortbread Cookies
  • 100g Unsalted Butter, melted
  • 400g Cream Cheese, softened
  • 200ml Heavy Cream
  • 150g Powdered Sugar
  • Zest of 2 Limes
  • Juice of 2 Limes
  • 4 Egg Whites
  • 100g Granulated Sugar

Instructions

  1. Crush the coconut shortbread cookies finely in a food processor and combine with melted butter. Press into the base of a springform pan to create a crust.
  2. In a bowl, beat the cream cheese until smooth. Gradually add heavy cream, powdered sugar, lime zest, and juice until glossy and smooth.
  3. Pour the cream cheese filling over the crust and smooth the top. Refrigerate for at least 4 hours or overnight.
  4. Whisk egg whites until soft peaks form, gradually add granulated sugar until stiff peaks are reached. Spread meringue over cheesecake and toast lightly with a kitchen torch. Chill for an additional hour before serving.
