Nutella Banana Bread

  • 1¾ cups (220g) all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 3 very ripe bananas (about 1½ cups mashed)
  • ½ cup (113g) unsalted butter, melted
  • ¾ cup (150g) brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ⅓ cup (80ml) buttermilk
  • ½ cup (90g) crushed banana chips (optional)
  • ¾ cup (225g) Nutella, divided
  • 2 tbsp cocoa powder (for marble effect)

Instructions

  1. Prep: Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment.
  2. Dry ingredients: Whisk flour, baking soda, and salt in bowl.
  3. Wet ingredients: Mash bananas. Mix in melted butter, sugar, eggs, vanilla, and buttermilk.
  4. Combine: Gradually add dry ingredients to wet until just incorporated. Fold in banana chips.
  5. Marble: Remove 1 cup batter; mix with cocoa powder. Alternate spoonfuls of plain and chocolate batter in pan. Swirl ½ cup Nutella through with knife.
  6. Top: Dollop remaining ¼ cup Nutella on top; swirl gently.
  7. Bake: 55-65 minutes until toothpick comes out clean. Cool 15 minutes in pan, then transfer to rack.

Notes

  • For extra Nutella pockets: Fill pan halfway, add Nutella layer, then remaining batter
  • No buttermilk? Use ⅓ cup milk + 1 tsp lemon juice
  • Storage: Wrap tightly at room temp 3 days or freeze 2 months
