One-Pan Baked Chicken, Potatoes, and Green Beans

  • pounds chicken tenderloins
  • 1 pound Yukon gold potatoes (cut into ½-inch cubes)
  • 1 (12-ounce) bag frozen cut green beans
  • ½ cup melted butter
  • ¾ teaspoon garlic powder
  • ¾ teaspoon onion powder
  • 1½ teaspoons dried oregano
  • ¼ teaspoon dried basil
  • ¾ teaspoon dried parsley
  • Pinch dried thyme
  • Pinch celery seeds
  • 1¼ teaspoons salt (or to taste)
  • ¼ teaspoon black pepper (or to taste)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Spray a 9 × 13-inch baking dish with cooking spray.
  3. Arrange the chicken tenderloins in a single layer down the center of the baking dish.
  4. Add the potatoes on one side of the dish and the green beans on the other, leaving the chicken exposed.
  5. Pour the melted butter over the chicken, potatoes, and green beans.
  6. In a small bowl, mix the spices and sprinkle evenly over the chicken, potatoes, and green beans.
  7. Cover with aluminum foil.
  8. Bake for 1 hour or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender.
  9. Remove foil for the last 10-15 minutes for a golden finish.
  10. Serve immediately.

Notes

Avoid overcrowding the pan, which affects roasting. For extra flavor, add lemon slices on top before baking.
